Omega-3 consumption linked to better sleep





A new pilot study from the University of Oxford indicates increasing children's intake of omega-3 fatty acids may improve their sleep. 

The study is said to be the first to analyze the potential link between sleep and fatty acid status in healthy children. Findings will be published in the Journal of Sleep Research.

Researchers provided 362 children from 74 Oxford primary schools with daily 600 mg supplements of algal sources or a placebo over a 16-week period to determine if sleep would improve. Participants were between 7 and 9 years old. The children weren't selected based on sleep issues, although all had problems with reading.

Previous research
has shown an increase in omega-3 consumption can improve children's ability to concentrate, read and spell in addition to lowering disruptive behavior.

At the beginning of the study, parents filled out a questionnaire, with results revealing that four in ten of the children dealt with regular sleep disturbances. The researchers fitted the 43 children rated as poor sleepers with wrist sensors that monitored movements in bed over five nights.

The study found children who took the daily omega-3 supplements enjoyed 58 minutes more sleep and seven fewer awakenings per night than those who took the placebo. Higher blood levels of the long-chain omega-3 DHA was linked to improved sleep, including "less bedtime resistance, parasomnias and total sleep disturbance."

"Various substances made within the body from omega-3 and omega-6 fatty acids have long been known to play key roles in the regulation of sleep," said lead study author Professor Paul Montgomery of Oxford University. "For example, lower ratios of DHA have been linked with lower levels of melatonin, and that would fit with our finding that sleep problems are greater in children with lower levels of DHA in their blood."
While further research is needed given the relatively small number of participants, researchers say that if the study results are confirmed implications will be "profound" for children struggling with behavioral and learning issues.

Omega-3s are associated with a number of other health benefits, including their ability to lower blood pressure. A study announced this week and published in the American Journal of Hypertension found omega-3 fatty acids EPA and DHA are as effective, if not more so, in lowering blood pressure than commonly recommended lifestyle changes, such as exercising more, consuming less sodium and drinking less alcohol.

Opting for This "Cheaper Food" Could Make You Age Faster

Twenty years ago today, former Monsanto lawyer and present FDA deputy commissioner Michael Taylor declared genetically engineered foods "substantially equivalent" and declared they would not need to be labeled for consumers.

Today is also the last day of the Money Bomb Against Monsanto Campaign, which launched on May 1. Earlier this month, volunteers and staff from the California Right to Know Campaign submitted nearly 1 million signed petitions from registered voters across the state of California to county officials, to place Right to Know Genetically Engineered Food Act on the Ballot for November 6.

This Act will require food manufacturers to identify genetically engineered ingredients on the labels of foods sold in California.

When California voters pass this ballot initiative, the Label Genetically Engineered Food Act will also not allow the common practice of mislabeling genetically engineered foods as "natural" or "all natural." But the biotech industry is not about to let this pass without a fight.

Industry Propaganda Aimed at Confusing and Misleading Consumers

The Council for Biotechnology and the Grocery Manufacturers Association have filed as formal opposition to this initiative. Not surprisingly, Monsanto is a member of both groups.

Big Biotech and major processed food manufacturers are pooling tens of millions of dollars together to spread their propaganda in an effort to defeat the California Ballot Initiative. In a recent Organic Consumers Association article, Alexis Baden-Mayer, Esq., Political Director of the Organic Consumers Fund writesi:

"Kathy Fairbanks, spokeswoman with the Coalition Against the Costly Food Labeling Proposition, says requiring labels on genetically engineered food would increase food prices.

What she doesn't say is that she's being paid by the trade association that represents both the biotech behemoths like Monsanto that engineer the GMO crops and the food industry giants like PepsiCo that use ingredients made from these crops in their products. PepsiCo., Kraft, Kellogg's and other top food processors market so-called "natural" protects at a premium that rivals what consumers pay for non-GMO and organic foods - even though these so-called "natural" foods contain unlabeled GMOs. The money these companies swindle from us as they trick us into paying top-dollar for GMO foods disguised as "natural" dwarfs the miniscule 0.01% of food costs attributable to GMO labels...

Maryann Marino, Southern California regional director of California Citizens Against Lawsuit Abuse says GMO labels will make family farmers and small businesses vulnerable to lawsuits.

Her organization is a state chapter of the American Tort Reform Association (funded by Monsanto) which thinks it's okay for Monsanto to sue farmers in 143 different patent infringement lawsuits when their crops are unintentionally contaminated with Monsanto's GMOs, but it isn't okay for farmers to get together and bring one lawsuit against Monsanto to stop the harassment. Think they really care about family farmers or small businesses? Their only interests are protecting Monsanto's market share and helping companies sneak Monsanto's ingredients into their products without letting consumers know."

Why Labeling Genetically Engineered Foods Will Not Significantly Raise Prices

Baden-Mayer also explains why you shouldn't fall for such fear-mongering, as these scenarios have little if any bearing in factual truth. She writes:

"A 2002 Oregon State University study reviewed the true costs of actual laws requiring labels on genetically engineered food in other countries. According to the study, a law in the UK, like the one proposed for CA, increased food spending by only 0.01%. The most any GMO labeling proposal was projected to cost was 1.8%. (This was from a Canadian study where, the authors note, the costs of segregating crops, changing processing procedures and changing the label were exaggerated and came only from expectations expressed by industry spokespersons.)

The 0.01% to 1.8% increase in the cost of labeling GMO foods must be put in perspective by looking at what companies already spend and consumers currently pay to avoid genetically engineered ingredients. A 2005 University of Delaware study showed that consumers would pay 20-30% more for non-GMO or organicii.

The so-called "natural" food industry has taken full advantage of consumer interest in avoiding GMOs and consumer ignorance in where those GMOs may be lurking. A review by the Cornucopia Institute of "natural," non-GMO and organic cereals showed that so-called "natural" cereals that contained unlabeled GMOs were sometimes more expensive than real non-GMO and organic cerealsiii.

Once GMOs are labeled, consumers will easily be able to substitute products that contain non-GMO cane sugar for products made with GMO sugar beet sugar or high-fructose corn syrup and change from vegetable oils made from GMO canola to non-GMO sunflower or olive oil. They'll be able to eat more non-GMO wheat and rice and less GMO corn and soy. They can choose non-GMO fruits and vegetables and avoid the few that are GMO. Eating non-GMO won't involve paying a premium, just making a choice between the foods that are genetically engineered and the ones that aren't. Foods that are GMO won't be able to be falsely labeled as "natural."

Why GE Labeling Will Not Open Up Farmers and Small Businesses to Lawsuits

The claim that farmers and grocers may become more vulnerable to lawsuits as a result of the Right to Know Genetically Engineered Food Act is also false and nothing but a scare tactic.

Why?

First of all, farmers and grocery stores are not responsible for listing ingredients on food labels. The only way a grocer could get into trouble would be if they knowingly mislabel their own store-brand product. They cannot be held liable if a food processor or food packer fails to comply with the labeling law.

The language in the Act is also very clear—it only requires labeling of foods that contain genetically engineered ingredients. Each new genetically engineered crop must be deregulated by the US Department of Agriculture (USDA), which makes them easy to track. Once deregulated, farmers clearly know whether their crop is genetically engineered or not since they are required to purchase expensive patented seeds that are clearly branded and marketed as genetically engineered by the seed companies. So when they sell their crops to a food manufacturer, there's no question whether they're dealing with a GE ingredient or not.

Furthermore, under the proposed law, foods containing genetically engineered ingredients cannot be labeled as "natural." Food packers and processors are given 18 months to comply with the new labeling requirements—which is the typical timeframe within which labels are routinely updated anyway—so complying with the new regulations should not be a major problem. Baden-Mayer also points out that:

"Food packers and processors may decide to seek non-GMO sources to avoid the law's labeling requirements, and that may increase markets for farmers who grow non-GMO crops, but that is a different issue than simply complying with a new labeling requirement." And, "If PepsiCo continues to sell unlabeled genetically engineered food in CA once this law is passed, we'll definitely sue them (we'd rather see them comply), but this law creates no incentive to go after small businesses."

These Foods Have 'Invisible Thorns' Which Can Rip Apart Your Insides

"You are what you eat" is one of the most profound and instructive sayings ever to be passed down to us through the ages, and thanks to an explosion of exciting new research into the way that food directly affects your genes, it can no longer be written off as merely a metaphorical expression.

In fact, food provides far more than just the material "building blocks" and "fuel" for the 'body-machine; it is also a source of genetic information, which is capable of informing the cells and processes within your body, for better or for worse.

What is quite amazing is the difference in biological response when comparing the right and wrong types of foods.

In fact, new research has revealed that eating the wrong plants can actually directly alter your genetic expression, which can lead to a myriad of diseases.

Micro-RNA Molecules from Your Food May Control Up to 30 Percent of Your Genes

Groundbreaking new research shows that microscopic RNA in the plants you consume enters your body and is actually capable of affecting the expression of up to 30% of your genes!

Never before could it have been imagined that your "genes" could be so profoundly affected by things you eat.

There is also the field of lectinology, which has opened our eyes to how plants – particularly grains and legumes – have a set of defenses, not unlike "invisible thorns," which can cause direct, non-immune mediated harm to a wide range of tissues and organs within your body.

Medical science is beginning to awaken to how profoundly food is intertwined with health and disease, and how nutrients affect genes, and how our genes respond to nutrients. This, in fact, is the field of study known as Nutrigenomics – something, I believe, you will be hearing far more about as the science begins to gain wider appreciation. It is a burgeoning new field, in fact launched soon after the completion of a working draft of the Human Genome project (2003), which failed to provide the long sought after "holy grail" of modern biology.

In a nutshell, the project failed to identify one gene for every one protein in the human body, forcing researchers to look to epigenetic factors -- namely, "factors beyond the control of the gene" – to explain how the body is formed, and how it works. What is the most important factor beyond the control of the gene? Diet.

Eating the Wrong Plants Can Mess With Your DNA Expression

Chances are you've never heard of micro RNA (miRNA) … but that doesn't mean it hasn't already been impacting your health … RNA is one of three major macromolecules, like DNA. Micro RNA are basically small pieces of RNA that interact with your genes, essentially stopping certain genes from being expressed.

MiRNA exists in human body fluid naturally; for instance, researchers have detected high expression levels of immune-related miRNAs in breast milk, particularly during the first 6 months of lactation. It's thought that this genetic material is transferred from mother to baby to help modulate the development of the infant's immune system. Cow's milk also contains miRNA, which is currently being explored as a possible new standard for the quality control of raw milk.

However, micro RNA also exists in plants, and for the first time research has shown that eating the wrong plants may transfer this plant miRNA to humans -- with potentially devastating implications.

The study, published in the September 2011 edition of the journal Cell Research, determined that microRNA from cooked plant foods like rice, wheat and potatoes can in fact collect in your blood and tissue, leading to a number of potential health problems.

The study further revealed that microRNA remains completely stable after not only cooking, but through the digestion process as well. Most importantly, the researchers found a significant quantity of microRNA in the human body, concluding that:

" … plant miRNAs are primarily acquired orally, through food intake."

So whenever you eat rice and certain other plant foods, including potatoes and wheat, you are ingesting genetic material that may turn certain genes "off." To date, microRNA has been implicated in a number of diseases ranging from cancer and diabetes to Alzheimer's disease. But what exactly is microRNA, and why is it so important?

"Gene Regulators" in Your Rice, Wheat and Potatoes

MicroRNA has been widely shown to alter many critical biological processes, including apoptosis – the process of programmed cell death and DNA fragmentation. As a result, the dysregulation of microRNAs has been linked to cancer and various other diseases. However microRNA are also responsible for regulating your genes on a very large scale. As mentioned, it has been estimated that miRNAs account for less than 1% of genes in mammals, but that up to 30% of genes are regulated by them.

Amazingly, microRNAs are known to regulate the flow of genetic information by controlling the translation or stability of something known as messenger RNAs, which is a molecule of RNA that carries valuable genetic coding information within your body.

What's more, this plant miRNA has been shown to interfere with human microRNA by mimicking it and binding to the receptors. In the study, researchers examined the two highest levels of these microRNAs in human participants, and found that it is shockingly prevalent among many dietary plant staples.

As results of the study show, three microRNAs were detected in rice and other foods including Chinese cabbage, wheat, and potato. Of course these are all highly common food staples for many families not only in the United States, but around the world. This means that you may be unknowingly consuming plant microRNAs that could be increasing your risk of cancer and other disease. Even more concerning is the fact that the study authors observed this effect in both healthy men and women, reporting:

"Upon investigation of the global miRNA expression profile in human serum, we found that exogenous plant miRNAs were consistently present in the serum of healthy… men and women."

What you eat, therefore, is who you are in the most literal sense possible.

This fact, while often overlooked, is fundamental in understanding how to optimize your health. If you eat the right foods, you thrive; eat the wrong foods, and you suffer. The problem is the field of nutrition is infused with the same intensity of impassioned debate and confusion as religion and politics – and rarely, only rarely do you get a clear picture of what is good for you, as an individual.

It can take a lifetime to figure out how to perfect a diet, particularly one suitable for you as an individual. The good news is that modern research is beginning to make headway in figuring out what is good for virtually all humans, at least in most cases. Certain foods appear to be problematic for many … and most grains continue to be at the top of this list.

Lectins: "Invisible Thorns" of the Plant Kingdom

MicroRNAs are only one component of plant foods that stretch beyond the scope of vitamins and minerals … Did you know, for instance, that many of the plants we consume for food, particularly grains and legumes, contain chemical and physical defenses that protect against being eaten?

These include anti-nutrients that interfere with the digestion of starches (anti-amylase), proteins (protease inhibitors), minerals (phytate), and many other similar molecules. Sprouting, fermentation, cooking and processing can sometimes reduce and/or eliminate these substances, but not in all cases.

There is one category, of particular interest, known as lectins. Lectins get their name from the Latin word legere, from which the word "Select" derives – and that is exactly what they do: they select (attach to) a very specific number of biological structures.

Lectins are capable of disrupting the health of the creatures that consume them, often piercing through the protective coating of their digestive tracts, and gaining entry into systemic circulation.

Wheat, for instance, contains an exceptionally small lectin known as wheat germ agglutinin or WGA, which is capable of attaching to the surface proteins of nearly all of its natural predators, from bacterial to fungi, worms to insects, mice to men.

Because all of the these creatures are composed, in part, of the biopolymer n-acetyl-glucosamine, and because WGA is designed to attach – exactly and exclusively – to this glycoprotein (part sugar, part protein), it is Nature's ingenious way of saying: "Hey, back off!" – at least when it comes to eating excessive amounts of the seed storage form of the mature grass plant, e.g. cereal grains.

In an article published on GreenMedInfo.com, Sayer Ji describes lectins as "invisible thorns," explaining:

"Nature engineers, within all species, a set of defenses against predation, though not all are as obvious as the thorns on a rose or the horns on a rhinoceros. Plants do not have the cell-mediated immunity of higher life forms, like ants, nor do they have the antibody driven, secondary immune systems of vertebrates with jaws. They must rely on a much simpler, innate immunity.

It is for this reason that seeds of the grass family, e.g. rice, wheat, spelt, rye, have exceptionally high levels of defensive glycoproteins known as lectins. These 'invisible thorns' are an ingenius means of survival."

Lectins were first discovered in castor bean casings, which contain the lectin ricin. Ricin is so toxic that only a dose the size of a few grains of salt can kill an adult if injected or inhaled. In fact, the US military investigated it for potential military use in the First World War. Like micro RNA, lectins are capable of directly affecting gene expression within cells.

The Very Real Danger of Genetically Engineered Foods

Given the fact that research now shows microRNA are appearing in humans who eat rice, it brings up many questions about the way the food we eat interacts with our physiology. While the Cell Research study had nothing specifically to do with genetically modified foods, the implications have everything to do with them.

MicroRNA appears to have dangerous implications for human health, so it stands to reason that genetic modification, which by definition involves organisms in which the genetic material (DNA) has been altered, may too. Further, it brings up a whole new way by which GM foods might harm human health, considering researchers have been using genes very similar to micro RNA to "turn off" certain plant genes.

As reported in The Atlantic:

"Researchers have been using this phenomena to their advantage in the form of small, engineered RNA strands that are virtually identical to miRNA. In a technique called RNA interference, or RNA knockdown, these small bits of RNA are used to turn off, or "knock down," certain genes.

RNA knockdown was first used commercially in 1994 to create the Flavor Savr, a tomato with increased shelf life. In 2007, several research teams began reporting success at engineering plant RNA to kill insect predators, by knocking down certain genes. As reported in MIT's Technology Review on November 5, 2007, researchers in China used RNA knockdown to make:

' ...cotton plants that silence a gene that allows cotton bollworms to process the toxin gossypol, which occurs naturally in cotton. Bollworms that eat the genetically engineered cotton can't make their toxin-processing proteins, and they die.'

And:

'Researchers at Monsanto and Devgen, a Belgian company, made corn plants that silence a gene essential for energy production in corn rootworms; ingestion wipes out the worms within 12 days.'

Humans and insects have a lot in common, genetically. If miRNA can in fact survive the gut then it's entirely possible that miRNA intended to influence insect gene regulation could also affect humans."

The research on micro RNA also has implications on the very doctrine by which biotech companies make claim to GM food safety: substantial equivalence (the idea that there is no difference between GM and non-GM crops). There is obviously much left to be discovered about how DNA and RNA interacts with human beings … and it is becoming increasingly clear that plants with altered DNA cannot be "substantially equivalent" to their natural counterparts. The Atlantic continues:

" … if companies like Monsanto want to use processes like RNA interference to make plants that can kill insects via genetic pathways that might resemble our own, some kind of testing has to happen. A good place to start would be the testing of introduced DNA for other effects -- miRNA-mediated or otherwise -- beyond the specific proteins they code for. But the status quo, according to Monsanto's website, is:

'There is no need to test the safety of DNA introduced into GM crops. DNA (and resulting RNA) is present in almost all foods. DNA is non-toxic and the presence of DNA, in and of itself, presents no hazard.'

Given what we know, that stance is arrogant. Time will tell if it's reckless. There are computational methods of investigating whether unintended RNAs are likely to be knocking down any human genes. But thanks to this position, the best we can do is hope they're using them. Given it's opposition to the labeling of GM foods as well, it seems clear that Monsanto wants you to close your eyes, open your mouth, and swallow."

How Can You Eat to Optimize Your Genetic Expression?

Given the knowledge that the food you consume ultimately becomes the life source of your entire body, it is important that you eat well not only to utilize vital nutrients but also to optimize your genetic expression.

This is cutting-edge information, but it is becoming very clear that there is far more to "food" than vitamins and minerals. Research has only scratched the surface into micro RNAs and their impacts on human health, but the preliminary research suggests they may provide one more method by which grains may harm your health.

For most, it appears healthy eating entails limiting carbohydrates from grains and potatoes, and instead focusing on carbs from vegetable sources. This is in line with the "Paleo" way of eating, which involves focusing on foods that are in line with your genetic ancestry, such as vegetables, nuts and grass-fed meats, while limiting sugars and grains. Cereals, potatoes and bread were non-existent prior to the dawn of agriculture, and there's reason to believe these foods are discordant with our ancient genome. We need to relearn what foods are ideal for our bodies not just to live on, but to thrive on.

Your emotions, pharmaceutical drugs, exposure to pollutants, and even exposure to sunlight (vitamin D) and supplements like curcumin play a role in how your genes are expressed.

Could THIS Be the Hidden Factor Behind Obesity, Heart Disease, and Chronic Fatigue?

Dr. Stephanie Seneff is a senior scientist at MIT and has been conducting research there for over three decades. However, she also has an undergraduate degree in biology from MIT, and a minor in food and nutrition. She's affiliated with the Weston A. Price Foundation and will be speaking at their November Dallas conference, and so will I. Dr. Seneff has a wealth of information in an area that many are not very knowledgeable about, and that is the importance of sulfur.

Sulfur deficiency is pervasive, and may be a contributing factor in:

* Obesity
* Heart disease
* Alzheimer's disease
* Chronic fatigue
* And more

She also believes conventional medicine is seriously confused about cholesterol, which is closely interrelated with sulfur. Furthermore, healthy cholesterol and sulfur levels are also highly dependent on your vitamin D levels! Here, she discusses the importance and the intricate relationships among these three factors.

Heart Disease May be a Cholesterol Deficiency Problem...

Considering the fact that conventional medicine has been telling us that heart disease is due to elevated cholesterol and recommends lowering cholesterol levels as much as possible, Dr. Seneff's claims may come as a complete shock:

"Heart disease, I think, is a cholesterol deficiency problem, and in particular a cholesterol sulfate deficiency problem..."

She points out that all of this information is available in the research literature, but it requires putting all the pieces together to see the full picture. Through her research, she believes that the mechanism we call "cardiovascular disease," of which arterial plaque is a hallmark, is actually your body's way to compensate for not having enough cholesterol sulfate.

She explains:

"The macrophages in the plaque take up LDL, the small dense LDL particles that have been damaged by sugar... The liver cannot take them back because the receptor can't receive them, because they are gummed with sugar basically. So they're stuck floating in your body... Those macrophages in the plaque do a heroic job in taking that gummed up LDL out of the blood circulation, carefully extracting the cholesterol from it to save it – the cholesterol is important – and then exporting the cholesterol into HDL – HDL A1 in particular... That's the good guy, HDL.

The platelets in the plaque take in HDL A1 cholesterol and they won't take anything else... They take in sulfate, and they produce cholesterol sulfate in the plaque.

The sulfate actually comes from homocysteine. Elevated homocysteine is another risk factor for heart disease. Homocysteine is a source of sulfate. It also involves hemoglobin. You have to consume energy to produce a sulfate from homocysteine, and the red blood cells actually supply the ATP to the plaque.

So everything is there and the intent is to produce cholesterol sulfate and it's done in the arteries feeding the heart, because it's the heart that needs the cholesterol sulfate. If [cholesterol sulfate is not produced]... you end up with heart failure."

So, in a nutshell, high LDL appears to be a sign of cholesterol sulfate deficiency—it's your body's way of trying to maintain the correct balance by taking damaged LDL and turning it into plaque, within which the blood platelets produce the cholesterol sulfate your heart and brain needs for optimal function... What this also means is that when you artificially lower your cholesterol with a statin drug, which effectively reduces that plaque but doesn't address the root problem, your body is not able to compensate any longer, and as a result of lack of cholesterol sulfate you may end up with heart failure.

IMPORTANT UPDATE: How Sun Exposure Impacts Your Sulfur Status

According to the conventional view, high LDL is correlated with heart disease, so the idea is that you can take a statin drug to artificially reduce the LDL and you'll be fine. However, as Dr. Seneff explains, if you have high LDL, it's because your body probably needs it to produce cholesterol sulfate, which your heart requires for optimal function. Hence, when you simply remove the LDL, you also remove your body's "backup" mechanism to keep your heart as healthy as possible, and as a result you get heart failure.

But high LDL is correlated with cardiovascular disease (please note that cardiovascular disease is an entirely different disease category from heart failure, which explains a lot of the confusion on this issue), so how can your body produce cholesterol sulfate without the harmful LDL?

How is it produced under normal, healthy conditions?

This is where sun exposure enters the picture. When you expose your skin to sunshine, your skin synthesizes vitamin D3 sulfate. This form of vitamin D is water soluble, unlike oral vitamin D3 supplements, which is unsulfated. The water soluble form can travel freely in your blood stream, whereas the unsulfated form needs LDL (the so-called "bad" cholesterol) as a vehicle of transport.

Her suspicion is that the simple oral non-sulfated form of vitamin D likely will not provide the same benefits as the vitamin D created in your skin from sun exposure, because it cannot be converted to vitamin D sulfate. This is yet another reason to really make a concerted effort to get ALL your vitamin D requirements from exposure to sunshine!

"[S]ulfate actually inactivates vitamin D," Dr. Seneff says. "The sulfated form of vitamin D does not work for calcium transport, which I find very intriguing. And in fact, I think it's the sulfated form for vitamin D that offers the protection from cancer. It strengthens your immune system. It protects you from cardiovascular disease. It's good for your brain. It helps depression. I think all of those effects of vitamin D are effects of vitamin D sulfate."

For those who are still under the mistaken impression that sun exposure is the primary cause of skin cancer, the following explanation may be of great help. In a Weston A. Price article on sulfur,

Dr. Seneff states that:

"Both cholesterol and sulfur afford protection in the skin from radiation damage to the cell's DNA, the kind of damage that can lead to skin cancer. Cholesterol and sulfur become oxidized upon exposure to the high frequency rays in sunlight, thus acting as antioxidants to "take the heat," so to speak. Oxidation of cholesterol is the first step in the process by which cholesterol transforms itself into vitamin D3."

As I've stated before, your body was designed to be exposed to the rays of the sun, and your skin contains all the necessary mechanisms to extract or produce beneficial nutrients from it while simultaneously shielding itself from harm. When you circumvent this natural process, either by using sunblock or staying out of the sun entirely, you lose all the health benefits, and give a variety of disease processes free reign.

Cholesterol Sulfate—The Link Between Obesity and Lack of Sun Exposure?

Furthermore, your skin also produces huge amounts of cholesterol sulfate, which is also water soluble and provides a healthy barrier against bacteria and other potentially disease-causing pathogens that might otherwise enter your body through your skin. And, due to its polarity, it can enter both fat cells and muscle cells with equal ease. Dr. Seneff proposes that, because of this, cholesterol sulfate may be able to protect fat and muscle cells from glucose and oxygen damage.

She also argues that when you're deficient in cholesterol sulfate, your muscle and fat cells become more prone to damage, which subsequently can lead to glucose intolerance; a condition where your muscles cannot process glucose as a fuel. As a result, your fat cells have to store more fat in order to supply fuel to your muscles, and excess fat accumulates as damage increases.

Sulfur also plays an important role in glucose metabolism. She hypothesizes that if sufficient amounts of sulfur is available, it will act as a decoy to glucose, effectively diverting it to reduce the sulfur rather than glycating and causing damage. This would have the beneficial effect of reducing inflammation, as sugar (glucose) is highly inflammatory and wreaks havoc in your body.

The Many Roles of Sulfur

Overall, sulfate appears to be a highly underestimated molecule with vast health implications. Dr. Seneff discusses her findings in great detail, but offers the following analogy:

"[I]f you breakdown the sulfate you will release energy, which means that the sulfate is actually absorbing the energy from light... I think of the skin as a battery – or solar panel you might say – taking in the sun's energy and saving it in the form of the sulfate molecule storing the energy in the sun."

It seems logical that humans would have some capacity to absorb energy from the sun directly, but this is the first time I've heard of a molecular explanation for this capacity!

"I have a lot of thoughts about what sulfate does," Dr. Seneff says. "One thing I'm quite sure of is that cholesterol sulfate is highly protective against bacterial and virus invasions. That's why sun exposure protects you from infection. It strengthens your immune system. That cholesterol sulfate is incredibly important to immunity."

Sulfur also plays a vital role in the structure and biological activity of both proteins and enzymes. If you don't have sufficient amounts of sulfur in your body, this deficiency can cascade into a number of health problems as it will affect bones, joints, connective tissues, metabolic processes, and more.

Other areas where sulfur plays an important role include:

* Your body's electron transport system, as part of iron/sulfur proteins in mitochondria, the energy factories of your cells
* Vitamin-B thiamine (B1) and biotin conversion, which in turn are essential for converting carbohydrates into energy
* Synthesizing important metabolic intermediates, such as glutathione
* Proper insulin function. The insulin molecule consists of two amino acid chains connected to each other by sulfur bridges, without which the insulin cannot perform its biological activity
* Detoxification

Sulfate—Essential for Babies

Cholesterol sulfate is also essential for babies in utero. A woman has about 1.5 units of cholesterol sulfate normally in her blood. When she gets pregnant, her blood levels of cholesterol sulfate steadily rise, and it also begins to accumulate in the villi in the placenta—which is where nutrients are transferred from the placenta to the baby. At the end of pregnancy the cholesterol sulfate in the villi rises to levels of about 24 units!

Colostrum also contains high levels of sulfur, even more than the breast milk itself. So clearly, nature seeks to provide the baby with plenty of both sulfur and cholesterol at the time of birth. Interestingly enough, when a mother has high serum cholesterol, the baby's levels are typically low.

Why?

Dr. Seneff explains:

"[Because] it can't get through. The mother has high serum cholesterol I think because she has low serum cholesterol sulfate. I think the two go together. The way to bring down your LDL in a healthy way is to get sunlight exposure on your skin. Your skin will produce cholesterol sulfate, which will then flow freely to the blood—not packaged up inside LDL—and therefore your liver doesn't have to make so much LDL. So the LDL goes down.

In fact... there is a complete inverse relationship between sunlight and cardiovascular disease – the more sunlight, the less cardiovascular disease."

Now, when a baby is born of a mother who has high cholesterol and low cholesterol sulfate, the baby's cholesterol will be low, but will also have fatty deposits in its arteries...despite the fact that fatty deposits are supposed to be associated with high cholesterol.

"The deposits are there, I think, to start this cholesterol sulfate program that's replacing the one that isn't happening..." Dr. Senneff explains. "Children who have adequate cholesterol sulfate delivered from their mother do not have fatty deposits... It's bizarre, but the high cholesterol associated with fatty deposits in the adult (that's causing heart disease) is a solution, not a cause."

This is a complete turnaround in thinking compared to the conventional paradigm!

Furthermore:

"The worst thing you can do is to clobber the LDL... because you're going to end up with heart failure," Dr. Seneff says..

Dietary Sources of Sulfur

Sulfur is derived almost exclusively from dietary protein, such as fish and high-quality (organic and/or grass-fed/pastured) beef and poultry. Meat and fish are considered "complete" as they contain all the sulfur-containing amino acids you need to produce new protein. Needless to say, those who abstain from animal protein are placing themselves at far greater risk of sulfur deficiency.

Coconut oil and olive oil also contain sulfur (and are ideal sources of healthful saturated fats too). Other dietary sources that contain small amounts of sulfur IF the food was grown in soil that contains adequate amounts of sulfur, include:

Organic pastured eggs Legumes Garlic Onion
Brussel sprouts Asparagus Kale Wheat germ



Any diet high in grains and processed foods is likely to be deficient in sulfur, because once whole foods are processed, sulfur is lost. Additionally, soils around the world are becoming increasingly sulfur-depleted, resulting in less sulfur-rich foods overall. Hard water also tends to contain more sulfur than soft water, which, according to Dr. Seneff, may be why people who drink soft water are at greater risk of developing heart disease.

In addition to making sure you're getting high amounts of sulfur-rich foods in your diet, Dr. Seneff recommends soaking your body in magnesium sulfate (Epsom salt) baths to compensate and counteract sulfur deficiency. She uses about ¼ cup in a tub of water, twice a week. It's particularly useful if you have joint problems or arthritis.

As for supplements, methylsulfonylmethane, commonly known by its acronym, MSM, is an option. MSM is an organic form of sulfur and a potent antioxidant, naturally found in many plants.

Nutrition - quality whole foods are the currency of life

Whether you believe in creation, or evolution or are undecided, most of us would agree that our bodies (that is our anatomy and physiology and biochemistry - which is really just how we process food and what we do with it) is substantially the same as that of our recent ancestors. So if we have the same body types and we process our food the same way as our great grandparents and great-great grandparents, can we expect dramatic consequences from eating the processed, irradiated, genetically engineered, refined and synthetic "foods" that our ancestors never had access to and never ate?

Indeed we can expect those consequences! Let's consider what happens if you substitute soda or Kool-Aid in your washing machine instead of water. How much longer would it work? What happens if you feed mayonnaise to a goldfish, french fries to a cow, donuts to a horse, assorted chemicals to a human? What happens when we substitute synthetic products for the water and many different nutrients that our cells and our children's cells and internal organs need simply to function well? In fact, the very sad consequences of the latest generations' food choices is becoming more apparent everyday as we are now seeing chronic diseases become epidemic in our society. The United States has the worst health status (life expectancy, morbidity, obesity and infant mortality) of any of the industrialized nations, yet we spend the most money on "healthcare" and take the most pharmaceuticals. Why are Americans getting sicker and sicker while drugging ourselves more and more?

The great expense of poor food choices is charged to both our bodies and the future, as well as to our wallets. A recent experimental trip to a large fast food chain cost $17.26 for four sandwiches and four "regular fries." For my $17.26, I got 2.80 pounds, net weight, of "food," once I had thrown out all the packaging. This amounted to over six dollars per pound, which is triple the average price of organic foods in a typical health food store. And most people think that fast food is cheap, and organic food is expensive!
Forget what you ate until today. What you eat from now on is vitally important to your continued well-being.

Until just a few generations ago, our ancestors were wonderfully fit and healthy compared with present-day generations. The majority lived good, active, healthy lives and ultimately died peacefully in their sleep. Today that is a rarity. Whereas chronic disease, chronic pain, and prolonged end-of-life care were rare for our ancestors, it is becoming much more the expected outcome for us. What single difference between these two centuries impacts our bodies the strongest? The overwhelmingly different factor in our lives is the refined, processed, chemical products that we eat, that our ancestors simply did not eat.
Do we really want to live this way? Let's apply some good, plain common sense to food choices.

Naturopathic physicians have come to understand that, just as you cannot pour soft drinks into your car and expect good performance, you cannot put synthetic and poor quality solids and liquids into your body and expect continued good health. Also, if our species, for better or worse, whether created, evolved or in-between, performs best on whole foods (vegetables, fruits, nuts, eggs, meats, etc.), then we can understand that putting synthetic liquid or solid wastes in your body will simply trash your most valuable possession: your own good health.
What's so great about good health?

Neighbors, co-workers, teachers, mentors and even friends can come and go. Money comes and goes. Material possessions can only be enjoyed by people who are comfortable in their own bodies. On the other hand, your good healthy body, as you preserve and care for it now, is your most valuable financial asset and your very best assurance of a strong youth full of opportunities, as well as a secure, successful middle age and retirement years. There is a lot about naturopathic medicine that is just good plain common sense. As Henry Lindlahr, one of the founding fathers of naturopathic medicine, said in Philosophy of Natural Therapeutics - "Medicines are in conformity with the constructive principle in nature insofar as they, in themselves, are not injurious or destructive to the human organism and insofar as they act as tissue foods and promote the neutralization and elimination of morbid matters and poisons."

In fact, this is exactly the goal of naturopathic medicine: to point out the foods that the patient needs, to promote the elimination of toxins, and above all to follow Hippocrates' instruction to First Do No Harm. In fact, First Do No Harm is the first of the naturopathic principles.

Lindlahr instructed doctors to give patients what they need, take away the toxins that destroy health, and to know when to refrain from doing too much. What could be more important or helpful for a doctor to do for his or her patients than that?
Food choices are a fork in the road that is always in front of you, where one way leads to discomfort and disease, and the other leads to enjoyable life.

It is never too late to improve your health. Food choices are always right there in front of you, with every supermarket item you either stop at or walk past, every restaurant that you either stop at or drive past, allowing you a better choice than what you may have made before.

But can we just turn 180 degrees from soda and fries on the one hand to whole foods on the other hand? How easy is it to start eating collard greens or squash or walnuts? Many people cringe at the idea of eating unfamiliar vegetables, such as arugula, mustard greens, turnip, etc. This is a result of never having eaten these foods prepared in an appetizing and satisfying way. I, along with the rest of my family, also had unthinkingly avoided mustard greens, out of a mistaken assumption of what they might taste like. Then I noticed the fine print on the label of the organic mustard greens from Cal-Organic Farms suggested a recipe, which I have modified as follows: fry some turkey bacon or regular (pork) bacon in a large pot and chop it in small pieces. Add washed, chopped mustard greens and enough water to cover. Boil the mustard greens, but only until slightly wilted. Too many people make the mistake of cooking greens to death, and then being displeased by both the color and the texture of the severely disintegrated leaves that result. What you are looking for is a little wilting, but with the color still bright, and still a succulent, pleasant (believe it or not) flavor. Cynthia Lair ND has written a wonderful cookbook with similar recipes titled Feeding the Whole Family.

So in general, what should we eat, ideally? In addition to the above cookbook, there are two other books that may be considered as good general nutritional guides, one a best-selling paperback, and the other a nutrition textbook. The first is Age Defying Diet, by the well-known but often misinterpreted Dr. Robert Atkins. If we manage to put out of our minds for a moment the triple bacon cheeseburgers and candy bars bearing his name that we have come to associate with Dr. Atkins, then there is a lot to be gained from Age-Defying Diet. Quite surprisingly, Atkins encourages much vegetables and fruits along with the meat, dairy, eggs and nuts in his book. In fact, at one point he suggests eating six cups of green vegetables per day. Dr. Atkins' arguments for a whole foods diet are very well documented from hundreds of research article citations. This is in addition to the experiences of approximately 30,000 patients who came through the Atkins Center during his lifetime. In fact, he says, "I know from my own experience with thousands of patients and from avidly reading numerous studies from Europe and the United States that those who consume a diet rich in fresh fruits and vegetables have significantly better health profile than those who eat other carbohydrates..." Robert Atkins MD, Age-Defying Diet. The reason that many people think of meat-only diets in connection with Dr. Atkins is because his weight-loss regimen is considerably more protein-heavy than his maintenance diet, which he describes in Age-Defying Diet. It is the maintenance diet that you want to begin and make peace with, and stay with, in order to successfully and contentedly live on all the foods you need and only the foods you need.

Even better is Dr. Joseph Mercola's book Total Health Cookbook and Program. Dr. Mercola appreciates the differences among the various metabolic types. Some individuals should have a diet that somewhat favors meat while others should have a diet that somewhat favors vegetables. Of course everyone should include some of both in their daily diet. Included in the book is a section on determining your metabolic type.

Another wonderful and well-referenced book on nutrition, that is more oriented toward the health care professions, is Medical Nutrition from Marz, by Russell Marz, ND. Dr. Marz does a wonderful job of bringing the biochemistry to life and relating nutritional strategies to various disease states. However, a companion primer on biochemistry may be necessary for the uninitiated reader.
Here are the best foods in a nutshell, including the nut: your body already truly and deeply loves vegetables, even if your taste buds don't love them yet.

Maximize whole vegetables. These are best organic and either raw or minimally cooked. In fact, fill up on vegetables all you like. That way you'll have less room for junk. If this sounds too simple to be true, remember that this ridiculously simple rule is the food maxim of healthy, slim adults. Try it, even if you only do it late in the day or every other day. If you can't find much fresh organic food in your area, try looking into the new movement called Community Supported Agriculture. This is a fast growing movement of small local farms throughout the United States that sell fresh seasonal food, usually organic, by subscription. You either pick it up at the farm or at an intermediate location, or they deliver to you. See www.csacenter.org. Once you try organic food right from the field, that has not been trucked hundreds or thousands of miles, you'll love the freshness of the produce so much, it would be hard to go back to supermarket food that has either been sitting around two weeks before you buy it, or worse, that came off an assembly line overlooking the industrial landscape surrounding the New Jersey turnpike. (That is where your processed food additives and flavorings and colorings come from, you know.) You think junk food can be addicting? Try healthy food! Freshness and taste and the deepest satisfaction of your body's basic metabolic needs are food addictions too! Once you are hooked, let them be your vices.
A rainbow of vegetables and fruits

Make your meal a rainbow. Green vegetables are such a staple of a healthy diet that they should be eaten every day. However, wonderful as green vegetables are, they do not provide the full spectrum of nutrients. Remember also the orange vegetables, such as sweet potato, squash, pumpkin and orange bell pepper, which provide the very important flavonoids. Red vegetables, such as tomatoes, are also important for lycopene. The liver alone has several hundred functions. These many jobs require the fuel of each of the different beneficial molecules found in a rich variety of healthy foods. In contrast, such nutrients are not available in junk food, even if they may have been added back in the factory.

Fruits are excellent, but avoid them in any concentrated form. Jams, jellies, fruit juice and other fruit-based processed foods are so concentrated that they produce high insulin responses. Insulin rushes are the very most important thing you need to avoid in order to maintain good health and appropriate weight. If you find yourself able to spend an hour in the kitchen a few times a year, try this simple recipe for unsweetened preserves.

Have a rainbow of whole fruits for the same reason as having a rainbow of vegetables. You need the nutrients that are represented in the various colors.
Meats, dairy, nuts, legumes and seeds

If you seem to do well eating meat, then go for high quality meat. Your best choices are organic, free-range meats. The more people ask for these in supermarkets, the more supermarkets will begin to carry them. In addition to the usual meats - buffalo, ostrich and venison are all nutritious and quite good. Roasting is better than frying. Organ meats such as liver are more highly nutritious than muscle meats, but both are good. Eggs and organic and raw cheese and milk will be beneficial to some and allergenic to others. It is best to pay attention to your body and watch for symptoms after eating dairy and eggs. The most highly allergenic foods are dairy, wheat, eggs, soy, citrus, peanuts and corn. That doesn't mean that you should avoid all of them, but these 7 foods are less digestible than others, so watch for feelings of fatigue or discomfort after eating them, even 12-24 hours later.

Snack on nuts and seeds. Walnuts, pecans, almonds, hazelnuts, cashews, pumpkin seeds, sunflower seeds, as well as butters made from seeds and nuts are very highly nutritious and should be eaten frequently, unless one is allergic. Walnuts, high in omega-3 fatty acids, are a very important brain food for everyone, especially children. Other foods high in omega-3 fatty acids are flaxseed, grass-fed beef and salmon. Legumes are an important source of protein and other nutrients, especially when combined with rice or other whole grains.
Leave the refined carbs behind at the supermarket

Minimize, or better yet get rid of, refined grains and refined sugar of all kinds. These contribute nothing to your health, as all nutrition has been extracted from them. Worse, they actively deplete good health, because they cause excessive insulin release, which is the worst factor in arterial plaque, as well as countless other health problems. Try to eliminate as much as possible breads, cookies, bagels, pretzels, donuts, candy and sodas. But how do you do this when daily life is so full of these items? The battle over junk food is won or lost at the supermarket, not at home. In other words, if you come home with a box of cookies, you will probably eat them, because after all, being only human, it is nearly impossible to let them simply sit there in the cabinet a few feet away from you the same way the whole wheat pasta has been sitting there for six months. Rather, fighting the willpower battle at the supermarket is made much easier by simply walking on past the unhealthy food. Or better, not even walking down those aisles. In fact, some naturopaths advise to simply shop the periphery of the supermarket and nothing more. That way, you pick up the whole fruits and vegetables, meat and dairy, and come home with a much healthier, and less expensive, set of grocery items than if you had gone up and down the interior aisles where all the processed foods are.
The only kind of diet that will do you any good is one that you can be comfortable with long-term and features the above criteria.

Don't count calories. You could drive yourself up a wall trying to figure out how many calories you are eating or should eat. Counting calories is almost certain to end up making you feel deprived of food while wasting your time with meaningless numbers.

Above all, make a kind of peace with this way of eating. Find a quantity and variety of vegetables, fruits, meat, dairy and nuts and legumes that is so comfortable and so easy for you that you stay with these foods long term. The goal is to have such a well balanced and therefore satisfying diet, that there is nothing wanting and thus no need to cheat. You will find that some of these foods are so tasty that they become comfort foods for you. Rely on these when you feel the need for a comfort food. Give it at least sixteen weeks. If you are not feeling considerably better in that time and much thinner (if you are already overweight), then you need to modify this diet, so that it is something that you don't feel the need to cheat on. Cheating, as every dieter knows, costs so much that you may as well glue cookies on your thighs and tummy rather than eating them. Enrich your whole foods diet with so many different whole foods of your liking that you feel no need to cheat. Keep enough healthy convenience foods (i.e. fruits and nuts) on hand that you reach for those when you need to snack, because they are so visually appealing, fragrant, tasty, seasonally fresh and in great variety in your colorful and overflowing fruit bowl. If you feel you need something more filling with your fruit snack or fruit and nut snack, have some organic cheese with it. These items also pack and keep very nicely in a bag to take to work.
What do you do if eating whole foods seems to be too much of a change?

Start very slow and very easy. Dr. Steven Ehrlich of Southwest College of Naturopathic Medicine is sensitive to people trying to change their diet, and the frustration that they may feel. Dr. Ehrlich instructs his students, "Have your patients add something rather than subtract from their diet To start, have them eat one apple a day." Here is an almost free change that one can make, a good tasting, easy to store, easy to carry, highly nutritious convenience food that is available year round. (Not to mention that it's probably the least messy thing you can eat on the go). Of course, after the patient masters this, Dr. Ehrlich gradually challenges his patients further with more and more good foods, but always gently, at the patient's own pace, considering individual appetites, and with great compassion. Surreptitiously (and insidiously!) the unhealthy items in the diet start falling away as patients fill up more and more on apples and later other whole fruits and vegetables. Let us all live up to such wonderful compassion as Dr Ehrlich teaches, as we ever so gently redirect others away from the plethora of processed foods that surround us in the supermarkets and the highway fast food outlets toward something more tasty, more nutritious, more aligned with our genetically acquired needs, and . . . more natural!
